Irish Brown Soda Bread

Allen Drake started making this a lot in 2004 and really likes this recipe, thinking it best recreates the breads he had in Ireland.

 

Preheat oven to 425 degrees F.  Lightly grease a baking sheet.

 

Ingredients:

6 cups whole wheat flour

1 ½ cups bread flour

½ cup rolled oats

1 ½ teaspoon baking soda

1 ½ teaspoon salt

4 cups buttermilk (1 quart)

 

Directions:

 

            In a large bowl (a standard Kitchenaide mixing bowl will do), stir together whole wheat flour, bread flour, rolled oats, baking soda, and salt.  Gently mix in the buttermilk until a soft dough is formed.  Knead very lightly.  Divide the dough into 6 pieces and form into rounded flat loaves.  Mark each loaf with an “X” and place on the baking sheet.  Bake in the 425 degree preheated oven until golden brown, about 27 minutes.

 

            Makes 18 servings.  This bread can be frozen and thawed in the microwave very nicely.  A Kichenaide mixer can be used to do all of the above stirring and kneading.  This is a very easy recipe.
